Easy prep. Beautiful presentation. Great Taste. What could be better? Yield: 24 mini quiches
24 mini pie shells
1 tablespoon oil
5 scallions, sliced
4 ounces pastrami, diced
1/2 cup Beleaf Frozen Broccoli Florets, chopped
2 tablespoons Mishpacha Flour
2 eggs
3 tablespoons Gefen Oat Milk or other pareve milk
salt, to taste
black pepper, to taste
Preheat oven to 350 degrees Fahrenheit.
Bake pie shells for five minutes.
In a large skillet, heat oil. Sauté scallions for two minutes.
Add pastrami and fry for two minutes while stirring.
Add broccoli and stir over low flame for three minutes or until softened.
Transfer mixture to a medium-sized bowl and allow to cool for 10 minutes.
Stir in remaining ingredients and spoon into pie shells.
Bake for 15 minutes.
