Ingredients

Pastrami Pinwheels

  • 2 tablespoons oil, such as Gefen Canola Oil

  • 1 Spanish onion, sliced into 1/4-rings

  • 16 slices pastrami

  • 4 6-inch square tortilla wraps

Guacamole

  • 3 large avocados, peeled and chunked

  • 1 tablespoon Tuscanini Lemon Juice

  • 1 teaspoon salt

  • 1/2 teaspoon pepper

Directions

1.

In a medium skillet, heat up oil. Lower flame and sauté onions until soft. Raise flame and fry pastrami until beginning to curl, about three minutes each side.

Place avocados in a medium mixing bowl and mash coarsely. Mix in lemon juice and spices, then stir in the vegetables.

3.

Assemble: On a flat wrap, spread a layer of guacamole. Top with a layer of pastrami and onions. Roll up tightly and slice into six pinwheels. Repeat with remaining wraps.
