The thought of these is absolutely mouthwatering! Yield: 24 wheels
2 tablespoons oil, such as Gefen Canola Oil
1 Spanish onion, sliced into 1/4-rings
16 slices pastrami
4 6-inch square tortilla wraps
3 large avocados, peeled and chunked
1 tablespoon Tuscanini Lemon Juice
1 teaspoon salt
1/2 teaspoon pepper
4 cubes Gefen Frozen Crushed Garlic
1 cup cherry tomatoes, diced
wedge of red onion, diced
In a medium skillet, heat up oil. Lower flame and sauté onions until soft. Raise flame and fry pastrami until beginning to curl, about three minutes each side.
Place avocados in a medium mixing bowl and mash coarsely. Mix in lemon juice and spices, then stir in the vegetables.
Assemble: On a flat wrap, spread a layer of guacamole. Top with a layer of pastrami and onions. Roll up tightly and slice into six pinwheels. Repeat with remaining wraps.
