Upgrade your basic potato side dish with minimal prep for a delicious dish your family will love.
3 potatoes
1 medium onion
2 tablespoons oil
6 ounces pastrami
1 tablespoon Tuscanini Tomato Paste
1 tablespoon Tonnelli BBQ Sauce
pinch of Pereg Black Pepper
garlic mayo (try this recipe)
Preheat the oven to 425 degrees Fahrenheit.
Wash and rinse the potatoes thoroughly.
Prick the potatoes in a few places using a fork to allow steam to escape while baking.
Place the potatoes directly on the oven rack and bake for one hour.
In the meantime, heat oil in a large saucepan and sauté the onion until it turns translucent.
Cut the pastrami into small cubes and add it to the onions.
Add the remaining ingredients and mix well.
Once the potatoes are ready, cut a slit on top of each baked potato and stuff it with the pastrami mixture.
Drizzle garlic mayo over the potatoes before serving.
