Drizzle this berry jam over homemade ice cream for a delicious way to add four fruits to your total count.
6 large, ripe bananas
2 tablespoons Gefen Creamy Peanut Butter
4 cups frozen strawberries
1 cup frozen blueberries
2 tablespoons Gefen Honey
2 tablespoons fresh lemon juice or Gefen Lemon Juice
2 tablespoons chia seeds
Peel and slice bananas. Freeze in an airtight container for a few hours or overnight.
In a food processor fitted with the steel blade, blend the bananas until creamy. It will take a few minutes to achieve the right texture.
Add the peanut butter and pulse a few times to combine.
Transfer to an airtight container and freeze.
In a large pot, cook strawberries, blueberries, honey, and lemon juice over low heat until softened, about 10 minutes. Let cool and blend with an immersion blender.
Stir in chia seeds and let cool. The chia seeds will gel and thicken the sauce.
Store in the refrigerator until ready to use.

Delicious, simple, and healthy!! I wonder if a second blending after freezing will make it more scoopable.
