Diets I love having easy, protein-based snacks on hand for bites between meals and these fit the bill. Peanut-buttery and salty sweet, these protein balls come together in just one bowl and in less than 10 minutes. They’re perfect for a pre-gym snack, a flight or a long drive. You can store protein balls in an airtight container in the freezer for up to one month.
Yields: 10 protein balls
1/2 cup natural drippy peanut butter
1/3 cup date honey such as Heaven and Earth
1 teaspoon vanilla extract
1/4 cup Grab 1 Vanilla Protein Powder
1/2 cup rolled oats
1/3 cup mini chocolate chips
1/4 cup unsweetened shredded coconut
Add the peanut butter, date honey and vanilla extract to a medium bowl and mix to combine.
Combine the vanilla protein powder and rolled oats with the wet ingredients and mix well. The mixture will start to thicken and come together.
Add the chocolate chips and shredded coconut to the bowl and mix in with your hands- the mixture may seem dry, so use your fingers to combine it all.
Divide the mixture into 10 equal sized balls and roll between your palms. Place on a baking paper lined sheet tray and freeze for one hour, letting the mixture come together. Remove and serve.
