1/2 cup oats
2 tablespoons water
6 Medjool dates, pitted and checked
pinch salt
1/2 bar 72% chocolate
1/2 cup raw peanuts or chopped almonds
Soak pitted dates in boiling water.
In a food processor, blend the nut butter, oats, dates, salt and two tablespoons water reserved from soaking dates. If the mixture is too dry, add water one tablespoon at a time (desired texture is chewy).
Add the nuts and mix by hand.
Press the mixture into a six-inch pan.
Melt the chocolate and spread on top.
Refrigerate until chocolate hardens. Cut into bars. Store in the freezer and serve partially defrosted.
