1 lemon, zest and juice
1 orange, zest and juice
6 pears, sliced in half
1 star anise
3 tablespoons sugar
1 vanilla pod
3 cups Tuscanini Red Cooking Wine
1/2 cup chopped pistachios
1/2 cup chopped mint
zest 1 orange
one box of frozen non dairy riches whip
one can of coconut milk, thick layer only
Add all ingredients to the pot, if the wine isnt covering the pears, add little water until they are submerged. Bring to a boil and turn down. Let it simmer for one hour until the pears are tender but not completely soft.
Mix to combine.
Combine in a stand mixer and whip to combine. Leave in fridge.
To serve, place coconut whipped cream, or vanilla ice cream in a shallow bowl, top with poached pear and sprinkle with nut topping.

what’s the thick layer of coconut milk?
When you buy coconut milk that is in the can, there is a very thick top layer or cream and then underneath it is liquid. For this recipe you just want the thick cream layer and you don’t need the liquidy part.
can I find vanilla pod in a local supermarket?
You should be able to and if you can’t you can definitley find them in a local specialty store or online, amazon sells them.
