Baked Pears with Coconut Filling

  • 2 large pears, peeled, cored, and halved

  • 1/2 cup shredded coconut

  • 2 tablespoons dry sweetener or maple syrup

  • 1 teaspoon cinnamon

  • 1/2 teaspoon ground ginger

Directions

Preheat oven to 350 degrees Fahrenheit.

In a baking dish, place pears cut side up.

In a small bowl, combine coconut, sweetener, and spices.

Place two tablespoons coconut in each pear half. Bake for 30 minutes or until tender.
