Preheat oven to 350 degrees Fahrenheit (175 degrees Celsius).
In the bowl of a mixer, mix the coconut oil, coconut sugar, and brown sugar. Add egg and vanilla extract, and beat together for two minutes, until smooth and creamy.
In a small bowl, whisk together the flour, coffee, cinnamon, baking soda, and salt. Add to the mixer and mix just until combined. Stir in the nuts and chips.
With a scoop or your hands, form dough into medium-sized cookies. Place on a baking sheet lined with parchment paper. Bake for 12 minutes. If desired, the cookies can be flattened with a glass before baking.
These cookies freeze well.
