Diets The perfect balance between a crispy and chewy chocolate chip cookie. The best part? They’re parve.
1 cup margarine, softened (I use Earth Balance)
1/2 cup vegetable or canola oil
1 and 1/2 cups white sugar
2 and 1/4 cups brown sugar
3 eggs
3 tablespoons vanilla extract
6 cups flour
3 tablespoons tapioca starch
3 teaspoons baking soda
1 and 1/2 teaspoons baking powder
1 and 1/2 teaspoons salt
3 cups chocolate chips (optional: mix of dark and semi sweet)
Mix margarine, oil, and sugars together in a bowl until uniform and creamy.
Add in eggs and vanilla, stirring one egg at a time.
Add in the dry ingredients, besides chocolate chips. Once the batter is almost completely mixed, add in the chocolate chips.
Bake at 375 degrees Fahrenheit for 12-15 minutes.
