Another fantastic morning treat for your family to enjoy. Yield: 16 muffins
4 eggs
1/2 cup sugar
3/4 cup Haddar Brown Sugar
1 tablespoon Gefen Vanilla Sugar
1 teaspoon baking powder
1 cup oil
1 cup Gefen Potato Starch
2 teaspoons Gefen Cinnamon
1/2 stick margarine
1/2 box kosher for Passover ladyfingers cookies, crushed coarsely
1/4 cup Haddar Brown Sugar
1/8 cup sugar
Preheat oven to 350 degrees Fahrenheit. Prepare 16 muffin holders.
In the bowl of an electric mixer, mix eggs and sugars on high for four minutes, until fluffy.
Add the rest of the batter ingredients and mix.
Fill muffin holders halfway and put straight in the oven for 10 minutes. (Don’t let it sit or eggs will separate.)
Meanwhile, in a bowl, mix crumb ingredients until crumbly.
Remove muffins from oven, generously sprinkle crumbs on top, and return to oven for another 15–20 minutes or until done.
