Pesach Nut Clusters

I adapted this recipe from a peanut cluster recipe a couple of years ago. It has been a Pesach favorite in my house ever since.

Ingredients

Main ingredients

  • 1/2 teaspoon baking soda

  • 1 pound lightly salted almonds

  • 2 pounds semi-sweet chocolate

Directions

Make the Dessert

1.

Place the brown sugar, honey, margarine, and salt in a medium saucepan over low-medium heat. Stir constantly until it comes to a boil. Let mixture boil exactly five minutes without stirring. Add the vanilla and baking soda. Mix well and add in the almonds.

2.

Drop mixture by tablespoon on heavy-duty foil. Freeze until firm.

3.

Melt the chocolate over a double boiler or microwave. Dip the clusters into the chocolate and refrigerate.

Margarine substitute Can this be made with oil rather than margarine? Thanks!

I think for this recipe you really need margarine. The margarine will help the clusters get a caramel-like texture that you won’t get if you use oil.

can these be made with oil instead of margarine?

I would suggest using coconut oil instead.

Absolutely delicious! These are just incredible! I tried them for pesach one year and they were a real hit! I gave them for shalach manos another year and got lots of compliments…they are super simple and so delicious!
