Ingredients

Picnic Set

  • Marinated Rainbow Salad (see recipe below)

  • Chili Pepper Spread (see recipe below)

Marinated Rainbow Salad

  • 1 cup cherry tomatoes, halved

  • 1 can Gefen Baby Corn, drained and sliced

  • 1 orange pepper, cut into matchsticks

  • 1 cucumber, sliced into thin rings

  • 1 small red onion, sliced into 1/4 rings

  • 1/4 cup vinegar

  • 1/4 cup oil

  • 1/4 cup sugar

Chili Pepper Spread

  • 2 teaspoons sugar (optional)

Directions

Prepare the Marinated Rainbow Salad

1.

Place all vegetables in a sealable container.

In a bowl, combine dressing vinegar, oil, and sugar and mix well. Pour over salad and shake.

3.

Marinate for three hours.

Notes:

Yields 8 1/2-cup servings

Prepare the Chili Pepper Spread

1.

Place all ingredients in a bowl. Blend with an immersion blender for 30 seconds.

Notes:

Yield: 2 cups
