Inspired by the popular Middle Eastern dish of hummus bassar, hummus topped with a spiced ground beef mixture, pizza bassar is baked on premade laffa that crisps up into the perfect pizza crust!
1 large shallot
1 cup parsley
3 cloves garlic or 3 cubes Gefen Frozen Garlic
2 pounds ground beef
1 and 1/2 teaspoons cumin
1/2 teaspoon allspice
1 and 1/2 teaspoons salt
1/2 teaspoon pepper
2 tablespoons Gefen Extra Virgin Olive Oil
2 laffas
16 ounces prepared hummus, such as Sabra
1/4 cup pine nuts
additional parsley, for serving
sumac onions (see below), for serving
tahini paste, for serving
1 medium red onion, thinly sliced
1 tablespoon olive oil
1 tablespoon sumac
juice of 1 lemon
1/2 teaspoon salt
Preheat oven to 400 degrees Fahrenheit.
To the bowl of a food processor, with the S blade attached, add the shallot, parsley and garlic and pulse until finely chopped. Transfer the mixture to a large mixing bowl. Add the ground beef, cumin, allspice, salt and pepper and mix until incorporated.
Brush two Gefen Parchment lined baking sheets with olive oil and place the laffa in the center. Spread the hummus out onto each of the laffas and top with the ground beef, crumbling it all around the dough.
Bake the laffas for 10 minutes, then sprinkle the pine nuts over the top. Continue to bake for an additional 10 minutes. until the laffa is crispy and the meat has browned. Transfer the laffas to a rack until ready to serve (otherwise the juices of the meat will make the crust soggy).
When ready to serve, drizzle with tahini paste and top with sumac onions (see below) and parsley.
Add all the ingredients to a container and marinate for at least 30 minutes before serving.
