Pizza Bourekas are flaky little pockets of cheesy pizza goodness. They take only 40 minutes to prepare and are great for a grab and go.

Let puff pastry squares defrost for 10 minutes. Preheat oven to 375 degrees Fahrenheit.
Place the squares at a diagonal to you on the counter. Divide the pizza sauce, mozzarella, and cheddar evenly between the squares. Place all of them in the center of each pastry piece.

Dip your finger in water and run it over the edges of each pastry square. Pick up two opposite corners and pinch together, then pinch down the sides, forming a sealed triangle.
Place the triangles on a Gefen Parchment-covered sheet-pan. Brush each lightly with beaten egg. Sprinkle the tops with oregano.
Bake for 20–25 minutes at 375 until golden and fully puffed up.
While hot, top with Parmesan and serve.
Notes:
These pizza pockets should be served immediately. They can be refrigerated and reheated a few days later, but they will not retain crispness. When cooling for kids, be sure to cut in half. The outside may feel cool, but the pizza sauce inside could be hot enough to cause burns.
