Diets A beautiful, delicious, and refreshing pomegranate salad to serve at your Yom Tov meal.
arils of 1 large pomegranate
3 small cucumbers, diced
2 small tomatoes, diced
3 tablespoons fresh parsley, chopped
1/2 yellow pepper, diced
1/4 cup Gefen Dried Cranberries
2 tablespoons Gefen Lemon Juice
2 tablespoons Gefen Honey
1/2 teaspoon Gefen Salt
1/4 teaspoon black pepper
2 tablespoons oil, such as Manischewitz Grapeseed Oil
Place pomegranate, cucumbers, tomatoes, parsley, peppers, and cranberries in a bowl.
To prepare dressing, mix lemon, honey, and spices in a small bowl and whisk until combined.
Add oil and mix well.
Pour dressing over salad and mix gently until coated.
