Diets Mixed roasted potatoes, crisp on the outside and tender on the inside, are paired with crispy fresh string beans, tangy pickled onions, Mediterranean spices, tart sour cream, and fresh herbs.

10 baby Yukon potatoes, halved
10 red bliss potatoes, halved
1/2 pound French string beans
1/2 teaspoon fennel seeds
1 teaspoon Maldon sea salt
1 teaspoon black pepper
1/2 teaspoon zaatar spice
16 ounces sour cream
1 teaspoon fresh mint
1 teaspoon dill
pickled onions, for garnish
Season potatoes with salt and pepper. Roast in oven until golden.
Slice raw string beans diagonally and season with olive oil, zaatar spice and black pepper.
Mix together potatoes and string beans.
Make a hole in middle and add the sour cream.
Garnish with fresh mint, dill and pickled onions.
