Diets These muffins are a protein-packed breakfast and a fabulous way to start your morning. (Or a snack any time of day!) The blueberries are optional but definitely take the muffin up a notch.
These muffins freeze well.
1 package farmer cheese
1 container (3.5 ounces) Greek yogurt, plain or vanilla
4 eggs
1/4 cup milk
1/4 cup maple syrup
1/4 cup oil
1 teaspoon vanilla extract
1 and 1/4 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
blueberries, to taste
cinnamon, to taste
Preheat oven to 350 degrees Fahrenheit. Line or grease a muffin tin.
Mix the farmer cheese, Greek yogurt, eggs, milk, maple syrup, oil, and vanilla.
Add the flour, baking powder, and salt. Mix until combined.
Fold in blueberries and cinnamon.
Divide the batter among the muffin cups.
Bake for 14 to 20 minutes, until the muffins are set and lightly golden.
