These gluten-free, vegan churros are crunchy on the outside and light and fluffy in the inside. A perfect, lighter Chanukah treat! 2 and 1/4 cups oat flour
3/4 cup Gefen Almond Flour
1 cup water
1 cup pumpkin puree
1/4 cup vegan butter
2 tablespoons sugar
1 tablespoon Gefen Maple Syrup
1 teaspoon xanthan gum
1/4 teaspoon Haddar Baking Powder
1/4 cup vegan butter
1/2 cup sugar
1/2 cup chocolate pieces (can use Chanukah gelt coins, such as Elite Chocolate Coins)
In a pot, melt one-fourth cup butter, two tablespoons sugar, and water together. Bring to a light boil.
In a bowl, mix together oat flour, almond flour, xanthan gum, and baking powder.
Next, make a small indent in the center of the flour mixture and add pumpkin puree with one tablespoon maple syrup.
Once the water mixture is hot and melted, pour it into the bowl with the flour. Mix everything together until the batter is well combined.
Then, add the star tip into the piping bag and start to fill the bag with the batter.
Once the bag is full, begin to lay out five-inch-long churros onto the air fryer. Fill the tray as much as you can. You might have to do this two times.
Lightly spray the churros and fry in the air fryer at 350 degrees Fahrenheit for 25 minutes.
After the churros are done in the air fryer, melt one-fourth cup butter in the microwave, in a microwave safe bowl.
Lay out the half cup sugar on a wide plate. Lightly brush a churro with butter and then toss each one into the sugar. Repeat until all the churros are fully coated in sugar.
After the churros are done, melt the chocolate in a microwave-safe bowl. Then, dip your churros in the chocolate and enjoy your Chanukah treats!
