An easy purple cabbage salad with a crunch!
1 Tbsp olive oil
1 tsp mayo (optional)
juice of 1 fresh lemon
salt & pepper to taste
1 bag shredded purple cabbage
3 scallions, chopped
1/8-1/4 c dried cranberries
1/8-1/4 c roasted sunflower seeds, pumpkin seeds, slivered almonds or cashew halves
Combine all ingredients in a bowl or large ziploc bag. Mix well and serve! Leftovers are good for a day or two.
