Quesadillas (Individual Pizzas)

These mini pizzas are perfect for a quick supper or a super snack when pulling an all-night study session! They are very adaptable for any wrap, tortilla, or pita bread. And you can add in any fillings you like.

Ingredients

Main ingredients

  • 8 small (6-inch) flour tortillas; or 4 wraps, cut in half; or 4 pitas, split

  • 1 cup shredded cheese

  • 1/2 cup Tuscanini Marinara Sauce or salsa

Directions

Make the Quesadillas

1.

Preheat sandwich maker and spray with nonstick cooking spray.

Place one tortilla on the bottom of the sandwich maker, spread with sauce, and sprinkle with cheese. Add any other fillings you like. Cover with other tortilla, close lid, and cook for about five to six minutes, until tortillas are cooked through and cheese melted.

Slice in half with a pizza cutter and serve with additional salsa or guacamole as desired.

Notes:

Quesadillas can also be made very easily in a frying pan. Spray the frying pan with nonstick cooking spray and heat. Place the bottom of the tortilla on the frying pan and add the sauce, cheese, and fillings. Cover with the other tortilla. When the cheese melts, (approximately, after two minutes) flip it over and cook on the other side. Cut in wedges with a pizza cutter.
