As a recipe writer, I’m always testing new dishes and ideas, but when winter comes around, curry is on repeat. There’s just something about it that’s comforting and cozy, and I love to play around with different styles, going with warm, Indian-inspired spices or sometimes brighter and bolder Thai ingredients. What I love about curry is that it’s easily adaptable, so I can make it with whatever I have on hand. This simple recipe is a great starting point!
1 onion, finely diced
2 cloves garlic, minced or 2 cubes Gefen Frozen Garlic
1 tablespoon olive oil
1 tablespoon curry powder
1 and 1/2 pounds chicken breasts, cut into chunks
3 tablespoons Manischewitz Honey
3 tablespoons soy sauce
1/2 cup Gefen Crunchy Peanut or almond butter
1/2 cup water
Basmati rice, for serving
scallions, diced, for garnish
Sauté onion and garlic in oil until translucent. Add curry powder and continue to sauté until fragrant.
Add chicken and stir over medium heat until no longer pink. Add honey, soy sauce, nut butter, and water, and stir until creamy.
Simmer until the sauce thickens, about 10 minutes.
Serve over basmati rice and garnish with scallions.
