1 pomegranate, seeded
2 sweet potato
1/2 cup roasted salted sunflower seeds
Olive oil
2 cups tricolor quinoa cooked according to package instructions, cooled
salt
pepper
garlic powder
paprika
1 box spring mix
salt and pepper
1/2 – 3/4 C olive oil
juice of 1 lemon
Cube sweet potato, line on baking sheet, drizzle with olive oil and spices. Bake for approximately 30 min or until soft. Cool.
Arrange spring mix, sweet potato, quinoa, sunflower seeds, and pomegranate in a bowl.
Combine dressing ingredients and mix into salad.
