One thing I’m grateful for in this ghastly winter is the sweet tart perfection of citrus. I use them in every capacity I can – and they really shine in this bitter radicchio and citrus salad!
3–4 assorted citrus (here I used cara cara, blood orange, and grapefruit)
2 endives
1/2 a fennel, thinly sliced
1 radicchio
a bit of dill
small sprinkle of slivered almonds
1 teaspoon Gefen Honey
2 tablespoons orange juice (reserved juice from cutting, or not)
1 tablespoon (Kedem White Wine) vinegar or lemon juice
1/8 cup oil
1/4 teaspoon Tuscanini Sea Salt, or to taste
Prepare the vegetables and fruit.
Combine dressing and pour over salad. Toss.
