Diets Crisp fresh salad of snap peas, jicama, orange, and pomegranate.
2 large oranges, segmented
1/2 pound sugar snap peas
1/2 jicama, julienned
1 cup pomegranate arils
1/4 cup lime juice
1/4 cup olive oil
3 tablespoons sugar
2 tablespoons honey
1/4 teaspoon kosher salt
1/4 teaspoon cumin
1 cube frozen parsley
Slice sugar snap peas into large chunks and toss with orange segments, pomegranate, and julienned jicama.
Combine dressing ingredients and toss 15 minutes before serving. This salad looks beautiful and is a nice accompaniment to meat or chicken.
