Rainbow Cookie Lollipops

My 2 little girls love to help me in the kitchen, and I’m always trying to create new fun ideas for chilled Sunday afternoon. I’m sure you can imagine how absolutely thrilled they were with this creation! Bright colours, lollipop sticks, and soft cookie dough – total win!

Ingredients

Main ingredients

  • 2 and 1/2 cups flour (may need to add 1/4 cup extra)

  • 1/2 teaspoon baking powder

  • 1/4 teaspoon salt

  • 2 sticks margarine

  • 1 and 1/2 cups white sugar

  • 2 tablespoons brown sugar

  • 1 large egg

  • 1 teaspoon vanilla extract

  • food coloring: red, green, blue, and yellow

  • lollipop sticks

Directions

Prepare the Rainbow Cookie Lollipops

In a large mixing bowl, beat together margarine and sugars on medium speed, for about two minutes. I used the paddle attachment of the Kitchen Aid.

Slowly add the egg and vanilla.

Turn off mixer. Pour in flour, baking powder, and salt.

Turn mixer on low, and beat until a dough forms, you may need to add a bit more flour if it’s too sticky.

Divide dough into four equal portions. Add about three drops of food coloring to each portion. (Feel free to swap different colors than the ones I used. have fun!) Mix the dough with your hands until color is distributed, and place each portion of dough into a ziploc bag, refrigerate at least one hour.

Remove from fridge. Preheat oven to 350 degrees Fahrenheit.

Divide each portion of dough into about 15 smaller portions. Take one small portion of each colour, roll them out into thin logs, line them up touching each other, and gently swirl and twist each edge so the colours blend a bit, then coil the rope into a round lollipop shape and slightly flatten. Transfer on top of a stick, on a parchment lined cookie sheet, pressing down a bit on the top of the stick so it’s about 3/4 of the way up the cookie. Chill in the freezer for 10 minutes.

Bake for 10-12 minutes depending on size you made them. Cool for 10 minutes before moving. Store in air tight container at room temp for up to a week, or freeze for a few months. Enjoy!

The recipe states in small print on top of the list of ingredients, that it makes about 15 servings, depending on how large you make them.
