Between reading the story of Noah’s ark this weekend and celebrating the birthday of my rainbow-obsessed daughter, I had no choice but to make a rainbow dessert. I had this idea but wasn’t sure it would work – luckily, it exceeded my expectations!!
Yields 9-10 treats
39 regular-sized marshmallows such as Elyon Marshmallows, divided
3 tablespoons margarine or butter, divided
6 cups Rice Krispies, divided
For each layer, melt the marshmallows on medium heat with the margarine in a pan. (See below for amounts for each layer.) Using a rubber spatula, mix in a few drops of food coloring. Turn off heat and mix in Rice Krispies.
Using gloves sprayed with non-stick spray, form your first layer into a long cylinder and place on parchment. Add your next layer by using the Rice Krispy mixture to form a rectangle the same length as the cylinder and drape it on top. Use your gloved hands to pat it down well. Repeat with each subsequent layer – each time, the rectangle should be wider!
Refrigerate. Once it has completely cooled, use a serrated knife, sprayed with non-stick spray, to slice. Yields 9-10 large rainbow treats. You can cut them in half to form quarter circles for smaller treats.
Purple: 1 and 1/2 marshmallows, 1/4 teaspoon margarine, 2-3 tablespoons Rice Krispies, purple food coloring or blue mixed with red
Blue: 3 and 1/2 marshmallows, 3/4 teaspoon margarine, 1/4 cup plus 2-3 tablespoons Rice Krispies, blue food coloring
Green: 5 and 1/2 marshmallows, 1 and 1/4 teaspoons margarine, 1/2 cup plus 2-3 tablespoons Rice Krispies, green food coloring or yellow mixed with blue
Yellow: 7 and 1/2 marshmallows, 1 and 3/4 teaspoons margarine, 3/4 cup plus 2-3 tablespoons Rice Krispies, yellow food coloring
Orange: 9 and 1/2 marshmallows, 2 and 1/4 teaspoons margarine, 1 cup plus 2-3 tablespoons Rice Krispies, orange food coloring or red mixed with yellow
Red: 11 and 1/2 marshmallows, 2 and 3/4 teaspoons margarine, 1 and 1/4 cups plus 2-3 tablespoons Rice Krispies, red food coloring
