Refreshing Romaine, Apple, and Fennel Salad

Love this new dairy salad! If you love dairy salads, this one is refreshingly different, while being simple and delicious. It’s important to use grated Parmesan because the flavor really gets everywhere. And if you’ve never used fennel before, why not try it now? It’s really not scary!

Ingredients

Salad

  • 8 ounces chopped Romaine lettuce

  • 1 pear, thinly sliced

  • 1 fennel bulb, thinly sliced (I used a mandoline)

  • 1/4 red onion, finely diced

  • 1/4 cup grated Parmesan cheese

Dressing

  • 1/2 teaspoon salt

  • pinch of black pepper

  • 1/4 teaspoon dried parsley

Directions

1.

Whisk together all dressing ingredients.

2.

Add all salad ingredients to a bowl. Toss with dressing.
