This recipe is not only delicious, but it is also a great way to use up leftover lettuce from the seder. It’s so refreshing and delicious, and I can never make enough of it.
6 ounces romaine lettuce
1/2 pineapple
1 big orange
1 yellow apple
1 green apple
1 red delicious apple
1 kiwi
handful of pomegranate seeds (optional)
1/2 cup Yumtee walnut chunks
3/4 cup orange juice
1/2 freshly squeezed lemon or about 1 and 1/2 tablespoons Gefen Lemon Juice
Peel all the fruits and cut into small pieces.
Mix with the lettuce.
Before serving, top the salad with pomegranate seeds, walnuts, and dressing.
