Rich Rumball Cups

Ingredients

Rum-ball Cake

  • 4 cups cake crumbs

  • 1 egg

  • 1 tablespoon coffee, dissolved in a dash of hot water

  • 1 and 3/4 cups confection sugar, such as Gefen

Chocolate Ganache Layer

Chocolate Pudding Cream

Directions

Prepare the Rum-ball Cake

1.

Combine all the ingredients in a medium-sized bowl and mix well.

2.

Put in the fridge to set for 1/2 hour.

Prepare the Chocolate Ganache Layer

1.

Place the chocolate and whipped cream into a double boiler. Allow to melt fully over medium heat, and then allow to cool.

Prepare the Chocolate Pudding Cream

1.

Beat the whip until stiff.

2.

Add the vanilla and chocolate pudding. Mix lightly until combined.

3.

Transfer into a piping bag with a star tip.

How to Assemble

1.

Start with adding two tablespoons of rum ball cake to the bottom of your cups.

2.

Flatten the top with a spoon, add about one tablespoon of chocolate ganache on top, and pipe the chocolate pudding cream over it.
