Rivka’s Zucchini Soup

Ingredients

Rivka’s Zucchini Soup

  • 2 onions, chopped

  • 8 medium-sized zucchinis, unpeeled and chunked

  • salt (or salt substitution), to taste

  • pepper, to taste

  • water, to cover

Directions

1.

Sauté the onions in water until lightly browned.

2.

Add the zucchini to the onions and continue sautéing for about 10 to 15 minutes till soft.

3.

Cover the pot with the lid and continue to sauté, stirring occasionally. (It will release its own juices.)

4.

Add water to cover plus a little more.

5.

Add salt (or salt substitute) and pepper to taste and cook for about another 20 minutes.

6.

Blend with an immersion blender.
