Diets Aka: Sweet Potato Savory Donuts. A perfect alternative to deep fried donuts for Chanukah.
Makes: 6
1 small cup of toasted sesame seeds, blended into flour
2 medium handfuls of roasted sweet potatoes (with extra virgin olive oil!)
1 and 1/2 medium whole avocados, deseeded and flesh scooped out
a pinch of salt
1/4 teaspoon cracked black pepper
juice of 1 medium lemon wedge
6 small pinches of sweet paprika for garnish
In a medium sized mixing bowl, blend both of the ingredients for 10 minutes or until the mixture is smooth. (Don’t over-mix).
Preheat the oven to 180 degrees Celsius (356 degrees Fahrenheit). On a large flat tray with baking paper, shape the dough into six donuts. (Wet your hands with water before shaping each donut). Bake for 10 minutes or until they are brown underneath.
Take them out of the oven and let them cool for 10 minutes.
In a medium sized bowl blend all the ingredients for a minute, or until the consistency is smooth and thick.
Gently spread the avocado sauce on the donuts and gently sprinkle each of them with paprika. Finally, place them all on a lovely platter of your choice! Enjoy!
