Diets Quick, easy, and full of flavor – this Salmon Lo Mein with rice noodles came together in under 30 minutes and totally hit the spot!
8 ounces medium-size rice noodles, such as Gefen
12 ounces salmon, skin removed and cubed
3 tablespoons soy sauce
2 tablespoons Gefen Honey
1 teaspoon Gefen Sesame Oil
1 tablespoon grated fresh ginger
1 red bell pepper, sliced
1 cup snow peas
1/2 cup sliced mushrooms
3 green onions, sliced
salt
pepper
cooking spray
a drop of lemon juice
sesame seeds for topping (optional)
Cook rice noodles according to package directions. Drain and set aside.
Spray a pan with cooking spray. Season salmon with salt, pepper, and a drop of lemon juice. Cook two to three minutes per side. Set aside.
Spray the same pan again and stir-fry mushrooms, bell pepper, and snow peas for a few minutes until they start to soften.
Add ginger and cook for another 30 seconds.
Add noodles and salmon to the pan.
In a small bowl, mix soy sauce and honey. Pour it into the pan and toss everything to coat.
Drizzle with sesame oil and top with green onions and sesame seeds if you’d like.
