Diets A new take on salmon to add to your Yom Tov rotation.
2 tablespoons oil, such as Gefen Cottonseed Oil
1 zucchini, diced
1 red pepper, sliced
4 slices salmon, cubed
1/4 cup orange juice
1/4 cup Gefen Honey
1/2 teaspoon Gefen Paprika
In a frying pan, sauté vegetables in oil. Remove from pot.
Add salmon to the pot and cook for three minutes on each side.
In a bowl, mix sauce ingredients until combined.
Return vegetables to the pot. Pour sauce over everything and cook for five minutes.

This is too sweet for me. I can’t have much citrus, and more likely add onions, garlic seasoning, herb seasoning, some honey mustard and light soy. I have to watch my glycemic levels, and be careful of my kidneys. I’m 71 years old.
