Diets This salmon stack will wow your guests with a fruity tang and a no-fail pretty presentation.
1 teaspoon oil, such as Gefen Cottonseed Oil
1 pound salmon (ask for a 4-inch square cut)
1/4 teaspoon freshly ground Gefen Black Pepper
1 lemon, peeled and sliced
2 ripe avocados
1 teaspoon Gefen Salt
juice of 1/2 lemon
1 mango, diced
1 red onion, finely diced
3 tablespoons freshly squeezed lime juice or Heaven & Earth Lime Juice
2 tablespoons oil, such as Gefen Cottonseed Oil
Preheat oven to 375 degrees Fahrenheit.
Heat oil in a nonstick pan over medium heat. Sear salmon for one minute on each side. Transfer to a baking dish and season with black pepper. Top with lemon slices, then cook in the oven for 20 minutes.
Mash avocado with salt and lemon juice until smooth.
Combine all ingredients.
To serve, spread guacamole on a serving plate, then top with salsa and salmon.
