Main ingredients

  • 1 (10 oz) bag medium spelt noodles or brown rice fettuccine

  • 1 cup oil

  • 4 eggs, beaten

  • 1 tablespoon salt

  • 1/4 – 1/2 teaspoon black pepper, according to taste

Directions

For the Kugel

1.

Preheat oven to 425 degrees Fahrenheit.

Cook noodles according to directions. Drain, then return to the pot and allow to cool to room temperature (20 to 30 minutes).

3.

Add oil, eggs, and spices to the cooled noodles and mix well. Pour into a 9- x 13-inch pan.

4.

Cover and bake at 425 degrees Fahrenheit for one hour.

5.

If you would like the top to be crunchy, uncover after one hour and bake 10 to 15 minutes more.

I love this recipe! It is very simple and so delicious! I cook it uncovered for at least 20 – 30 min as around here, the more crunchy, the better! I highly recommend this recipe!
