A rice and black bean vegetarian meal-in-a-bowl with cauliflower, corn, and salsa. For more great ideas, watch 4 Amazing Things!
1 (24 ounce) bag Beleaves Frozen Cauliflower
chili powder
salt
prepared Pereg Jasmine Rice
2/3 cup black beans
2/3 cup corn kernels
1 ripe avocado
2/3 cup salsa
Prepare the cauliflower. Preheat oven to 425 degrees Fahrenheit. Spread cauliflower on a greased baking sheet and sprinkle with spices. Spray with cooking spray and bake for 20 minutes.
Microwave rice for three or four minutes (depending on the strength of your microwave) according to package instructions. Season with salt to taste.
Assemble your bowls. Place rice in the bottom of two bowls. In different sections, top with cauliflower (you will have extra to munch on), black beans, corn, avocado, and salsa.
Toss all the ingredients together before enjoying and let the salsa “dress” the bowl.
