Going out to eat is a treat, so on the occasions that I do eat out, I usually order something special that I don’t have often, like a steak or a fancy appetizer that is too time-consuming to make at home. One night I was looking for something lighter and decided to try a grilled chicken appetizer. I was completely blown away; it was so juicy and tasty! The next day I got on the phone with someone who knew someone who knew another someone with connections to the restaurant, and told him, “You need to get me that recipe!” It only has three ingredients, but it’s packed with flavor.
1/2 cup Tuscanini Olive Oil
1/4 cup Tuscanini Balsamic Vinegar
1 tablespoon Haddar Kosher Salt
2 pounds chicken cutlets
Mix oil, vinegar, and salt in a large Ziploc bag. Add chicken cutlets and toss to coat. Marinate for at least an hour.
Grill for three to four minutes per side, until just cooked through.
