Diets White meat chicken leftovers from Shabbos are surprisingly the favorite in my home, and instead of eating it plain, here’s a delicious way to use it up.
3–4 cups thinly sliced romaine lettuce
1 cup shredded red cabbage
1 cup shredded white cabbage
2 carrots, shredded
1-2 bone-in chicken breasts (or whatever leftover chicken you have on hand)
3–4 scallions, sliced
1/4 cup chopped cilantro
toasted Gefen Sesame Seeds
toasted almonds, sliced
2 tablespoons toasted sesame oil
2 tablespoons Tuscanini Olive Oil
2 tablespoons Glicks Soy Sauce
2–3 tablespoons rice vinegar
1 and 1/2 tablespoons Manischewitz Honey
2 cubes Gefen Frozen Garlic
1 tablespoon mayonnaise, optional
1 teaspoon salt
Mix dressing ingredients and combine with salad. Enjoy!
