When you use Yukon gold potatoes, your potatoes will be crispy outside but stay soft and creamy inside.

Prepare the Potatoes

  1. Preheat oven to 350 degrees Fahrenheit.

  2. Peel and dice potatoes and place in a large resealable plastic bag.

  3. In a large bowl, combine oil, shallots and spices. Using an immersion blender, blend oil mixture. It will form a loose paste.

  4. Pour this mixture into the bag with the potatoes and mix well. Pour mixture into a baking pan. Cover and bake for two hours. Uncover and bake for another 30 minutes.
