Diets When you use Yukon gold potatoes, your potatoes will be crispy outside but stay soft and creamy inside.
1 (5-pound) bag Yukon gold potatoes, peeled and cubed
1/3 cup oil
1 large or 2 small shallots, peeled and cut into chunks
1 teaspoon black pepper
1 teaspoon paprika
1 tablespoon salt
Preheat oven to 350 degrees Fahrenheit.
Peel and dice potatoes and place in a large resealable plastic bag.
In a large bowl, combine oil, shallots and spices. Using an immersion blender, blend oil mixture. It will form a loose paste.
Pour this mixture into the bag with the potatoes and mix well. Pour mixture into a baking pan. Cover and bake for two hours. Uncover and bake for another 30 minutes.
