Diets Shaved ice is a refreshing dessert that has become a go-to for me. I love that you don’t need to take out a blender! You can make this concept with any fruit juice you’d like, the sky’s the limit.
2 cups freshly squeezed grapefruit juice
1 teaspoon lime juice
1 teaspoon lime zest (optional)
1/2 cup sugar
2 cups strong coffee (1/4 cup Haddar Instant Coffee dissolved in 2 cups boiling water)
3/4 cup sugar
1 teaspoon Gefen Vanilla
whipped cream or vanilla ice cream, for serving (optional)
Heat the grapefruit juice and sugar over low heat until sugar is dissolved. Add lime juice.
Pour onto baking sheet and place in freezer for 30-45 minutes until mostly set. Remove from freezer and shave the ice with a fork. Return to freezer for another 30-45 minutes and shave once more. Then place in freezer until ready to use.
Add sugar to boiling coffee while hot so it dissolves right away. Add vanilla and stir with a fork. Place on baking sheet and place in freezer. Shave twice.
Serve with whipped cream or ice cream.
