Mushrooms take on an entirely new personality in this recipe; they’re spiced, vibrant, and so addictive. Use them to top a bed of creamy hummus, and you’ve got yourself a winner dish that is perfect for dipping challah, pita, or chips.
2 packages Beleaves Oyster Mushrooms
3 tablespoons oil, divided
1 teaspoon Pereg Shawarma Seasoning
1/2 teaspoon onion soup mix
1/2 teaspoon garlic powder
1/4 teaspoon cumin
1/4 teaspoon kosher salt
pinch of black pepper
1 can Glicks Chickpeas, rinsed and drained
4 tablespoons Gefen Olive Oil
2 tablespoons tahini
juice of 1 lemon
1 teaspoon kosher salt
2 cloves garlic or 2 cubes Gefen Frozen Garlic
2 ice cubes
Cut off the thick ends of the mushrooms and discard. Pat dry with a paper towel. Shred the mushrooms into long strings. In a small bowl, combine two tablespoons oil, shawarma seasoning, onion soup mix, garlic powder, cumin, kosher salt, and black pepper. Mix well and set aside.
Heat a tablespoon of oil in a large flat pan. Add in the mushrooms and fry for about five to seven minutes, stirring only once or twice in between. Pour the shawarma oil into the pan and saute for an additional two minutes. Remove from the pan and set aside.
For the hummus, add all the ingredients to a food processor and blend for at least five minutes, until smooth and creamy.
To assemble, spread the hummus in a large serving platter and top with the shawarma mushrooms.
Garnish with fresh parsley, a drizzle of olive oil, and za’atar.
