Diets I use this method to prepare baked ziti for my entire family, some of whom are allergic to cow’s milk.
approximately 750 grams whole wheat penne or ziti
250 grams pasta sauce
250-gram block sheep/goat feta (or feta-style) cheese in brine
broccoli or your favorite vegetable/s (optional)
Boil salted water in a large pot. Add the noodles and cook until Al dente. Drain.
Meanwhile, use an immersion blender to blend up the feta cheese with its brine.
In a 9 x 13-inch baking dish, combine noodles, blended feta, pasta sauce, and veggie/s. Bake at 350 degrees Fahrenheit, covered, for 30 minutes.
