Diets This is the best coffee cake I have ever eaten or made, and believe me that is saying something! Sheila Troyestki is my grandmother’s friend and truth be told this is her recipe. But after years of eating it at the bungalow colony get togethers, my mother finally asked for the recipe and then passed it on to me. It is simply known as “Sheila Troyestki Cake” by my entire extended family and written down as such in all our cookbooks.
Yields 1 tube pan
6 eggs, separated
2 cups Beleaves Flour
3/4 cup oil
3/4 cup orange juice
2 teaspoons vanilla
1 teaspoon baking powder
1 and 1/2 cups sugar
3/4 cup Tuscanini Chocolate Sauce
3/4 stick margarine
1 cup Beleaves Flour
1 cup sugar
1 teaspoon cinnamon
Preheat oven to 350 degrees Fahrenheit.
Separate eggs. Beat egg whites in a stand mixer with half the sugar until stiff peaks form. Then add egg yolks one at a time, with the rest of the sugar.
Slowly add the wet ingredients, then slowly add the dry ingredients.
Separate one cup of batter and mix with 3/4 cup chocolate syrup. Pour the vanilla batter into the pan. Then drop spoonfuls of the chocolate batter into the vanilla in dollops. Swirl in figure eights with a knife.
Bake for 15 to 20 minutes. Add crumb topping of margarine, flour, sugar, and cinnamon. Bake for an additional 45 minutes.
