This recipe can easily be spooned into a cupcake tray for a healthy lunch box snack on the go. If you choose to use whole wheat flour, add an extra quarter of a cup of water so the appearance of the batter is slightly runny. So fluffy and delectable, the kids will never know you skipped the sugar. My kids love this cake for breakfast with a glass of milk.
3 and 1/2 c flour
1/2 tsp salt
1 tsp baking soda
3/4 tsp baking powder
1/2 c oil
3 eggs
1/2 c water
4 ripe bananas, mashed
3/4 cup chocolate chips (optional)
First mix the dry ingredients: flour, salt, baking soda and baking powder. Next add the oil, eggs, water and finally the ripe bananas. Top with chocolate chips. Blend until the batter is smooth and creamy. (Make sure it is slightly runny, adding a hint more of water as necessary)
Bake for 30 minutes at 325 degrees Fahrenheit or until lightly browned on top.
