Shredded BBQ Chicken Sandwiches

This recipe was such a hit that my kids told me to share it with you! I’m glad that I am, since it’s incredibly easy and I think you’ll enjoy it too. Serve with corn on the cob or a fresh salad if you’d like.

Directions

Prepare the Shredded Chicken Sandwiches

  1. Place the chicken, one cup of the BBQ sauce, and the water into a pot. Bring it to a boil then cover and lower to a simmer. Allow to cook about 20 to 25 minutes or until the chicken is fully cooked through and easily breaks apart with two forks.

  2. Remove the chicken from the pot and shred with two forks. Alternatively, shred right in the pot. Place the chicken back into the pot and add in the remaining BBQ sauce. Cook another five minutes uncovered.

  3. Prepare the coleslaw. In a bowl, mix together the dressing ingredients then add in the coleslaw mix. Toss till fully combined.

  4. Serve pulled chicken on a bun topped with coleslaw.

Notes:
If cooking in a crockpot, cook the chicken on low for six hours or high for three. If using the instant pot, cook for 15 minutes on high pressure.

Probably around an 45 min to 1 hour- just make sure there is plenty of liquid so it doesn't dry out!

This shredded chicken recipe was super fast to make and my whole family enjoyed!! When adding the BBQ sauce after pulling the chicken, we also added water as it needed more liquid. We served it over jasmine rice, with the delicious sauce. Thank you!!

Sure! You can definitely freeze the shredded chicken.
