Diets Make lunchtime your favorite time of day! This isn’t your parents’ grilled cheese! Start with a good quality cheese and, of course, fresh Tuscanini panini bread, and add savory sauteed mushrooms to the sandwich for good measure.
1 tablespoon butter
1 tablespoon Tuscanini Extra-Virgin Olive Oil
2 shallots, peeled and sliced
16 ounces brown mushrooms (you can also use assorted wild mushrooms), sliced
2 to 3 sprigs thyme
salt
pepper
4 slices smoked Gouda cheese
Heat a pan over medium heat. Add butter and extra virgin olive oil to the pan.
Once butter has melted, add shallots to the pan with a pinch of salt.
Sauté shallots until they start to soften.
Add mushrooms to the pan and sauté until soft and browned.
Season with additional salt, pepper, and fresh thyme.
Divide mushroom mixture evenly between two paninis.
Top each panini with two slices of smoked gouda cheese.
Press in a panini press until grill marks are present and cheese is melted, or pan fry.
