1 pound chicken
1/4 cup Haddar Mixed Nut Butter
1/4 cup soy sauce
3 cloves garlic, minced or 3 cubes Gefen Frozen Garlic
2 scallions, chopped
2 teaspoons fresh or 2 cubes Gefen Frozen Ginger
lemongrass, about a 3-inch piece
juice of 1/2 a lime
24-ounce bag frozen stir fry vegetables
15-ounce can baby corn, chopped
3/4 cup bean sprouts
1 tablespoon extra-virgin olive oil
2 teaspoons salt, divided
1 package soba noodles, prepared according to package directions
2 tablespoons Haddar Mixed Nut Butter
2 tablespoons soy sauce
2 cloves garlic, minced or 2 cubes Gefen Frozen Garlic
1/2 teaspoon ginger
juice of 1 lime
cilantro
chopped almonds and/or cashews
chopped scallions
In a large plastic bag, combine all ingredients, including the chicken. Mix well, massaging the marinade into the chicken. Set aside and allow to marinate for at least one hour.
When done marinating, grill on an indoor or outdoor grill pan.
In a large sauté pan, heat the olive oil.
Sauté the frozen veggies with one teaspoon salt until softened, about eight to 10 minutes. Add baby corn and bean sprouts and another teaspoon salt.
Continue to cook for another 20 to 25 minutes until veggies are all cooked through.
Prepare the sauce: Place all ingredients in a jar with a tight-fitting lid and mix well.
Chop grilled chicken into cubes.
Combine soba noodles with stir fry vegetables and chicken.
Add sauce on top.
Give a good mix and enjoy!
