Soba Stir Fry with Grilled Chicken

Ingredients

Grilled Chicken

  • 2 teaspoons fresh or 2 cubes Gefen Frozen Ginger

  • lemongrass, about a 3-inch piece

  • juice of 1/2 a lime

Soba Stir Fry

  • 24-ounce bag frozen stir fry vegetables

  • 15-ounce can baby corn, chopped

  • 3/4 cup bean sprouts

  • 1 tablespoon extra-virgin olive oil

  • 2 teaspoons salt, divided

  • 1 package soba noodles, prepared according to package directions

Mixed Nut Butter Sauce

  • 1/2 teaspoon ginger

  • juice of 1 lime

Optional Garnish

  • cilantro

  • chopped almonds and/or cashews

  • chopped scallions

Directions

Grill the Chicken

1.

In a large plastic bag, combine all ingredients, including the chicken. Mix well, massaging the marinade into the chicken. Set aside and allow to marinate for at least one hour.

When done marinating, grill on an indoor or outdoor grill pan.

Notes:

This recipe can be easily doubled or tripled, as needed.

Prepare the Stir Fry

1.

In a large sauté pan, heat the olive oil.

2.

Sauté the frozen veggies with one teaspoon salt until softened, about eight to 10 minutes. Add baby corn and bean sprouts and another teaspoon salt.

3.

Continue to cook for another 20 to 25 minutes until veggies are all cooked through.

Make Your Bowls

1.

Prepare the sauce: Place all ingredients in a jar with a tight-fitting lid and mix well.

2.

Chop grilled chicken into cubes.

3.

Combine soba noodles with stir fry vegetables and chicken.

4.

Add sauce on top.

5.

Give a good mix and enjoy!
