A tangy delicious appetizer or even the perfect lunch to be served with a side of sweet potato fries.
2 eggs
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon red pepper flakes
1/4 cup chopped cilantro
1 cup bread crumbs
1/4 cup feta cheese, crumbled
1/2 cup black beans, drained and rinsed
1/2 cup sweet corn, drained and rinsed
1/2 small onion, minced
1 clove garlic, minced
1/4 cup mayo
1/4 cup fat-free plain yogurt
1 tablespoon lemon juice
1/4 cup cilantro
1/2–1 jalapeño diced (depending on spice level)
1 and 1/2 teaspoons honey
1/2 teaspoon salt
1/2 teaspoon pepper
Beat eggs and add spices and breadcrumbs.
Then add feta, beans, corn, garlic and onion.
Let sit for five minutes to combine.
Using a small cookie scooper or tablespoon measure out portions and pan fry for 3 minutes on each side, flattening slightly when putting it in frying pan.
Serve with cilantro dipping sauce.
Combine all ingredients in food processor or blender and blend until smooth.
