2 cups flour
1 and 1/2 teaspoons baking soda
1 teaspoon ginger
1 teaspoon cinnamon
1/2 teaspoon salt
1 and 1/2 sticks margarine/butter
1 and 1/4 cups sugar, divided
1 egg
1/4 cup brown sugar
1/4 cup maple syrup
1 teaspoon Gefen Vanilla Extract
1/4 cup sugar, for rolling
Preheat oven to 350 degrees.
In a large bowl, combine flour, baking soda, ginger, cinnamon, and salt.
In an electric mixer, cream margarine and one cup sugar until smooth and creamy. Beat in egg, add maple syrup, brown sugar and vanilla and mix well.
Add flour mixture and mix until incorporated.
Using a small scooper, drop balls of dough into a quarter cup sugar and roll to coat.
Place on baking sheet, leaving half an inch between cookies.
Bake for 10 minutes – until the cookies are flat.
Yields 60 cookies
